Pensando alla cucina asiatica vengono in mente subito piatti unici e speziati, come il famosissimo pollo al curry! Un piatto carico di sapore, dal colore inconfondibile che fa subito India. La caratteristica principale di questa ricetta sono le spezie, un bouquet particolare e speciale che varia da paese a paese e in base ai propri gusti. Il curry, o più precisamente masala, è infatti un mix ottenuto dal pestaggio di diverse spezie e si trova in commercio già pronto o si può creare facilmente in casa. Noi abbiamo optato per la seconda soluzione e vi proponiamo una miscela realizzata utilizzando tra le altre la curcuma che dona il tipico colore giallo, il pepe di cayenna dalla piccantezza leggera e il profumo inebriante e il cumino che sarà la nota predominante!

Thinking of Asian cuisine, unique and spicy dishes immediately come to mind, such as the famous chicken curry! A dish full of flavor, with an unmistakable color that immediately makes India. The main characteristic of this recipe are the spices, a particular and special bouquet that varies from country to country and according to your tastes. The curry, or more precisely masala, is in fact a mix obtained by beating different spices and is commercially available ready or can be easily created at home. We have opted for the second solution and we propose a mixture made using, among others, turmeric that gives the typical yellow color, cayenne pepper with a light spiciness and intoxicating scent and cumin that will be the predominant hint!

Pepe di Caienna 1 cucchiaino | Cayenne pepper 1 teaspoon
Curcuma in polvere 2 cucchiaini | Turmeric powder 2 teaspoons
Paprika affumicata 2 cucchiaini | Smoked paprika 2 teaspoons
Cannella in polvere 1 cucchiaino | Cinnamon powder 1 teaspoon
Cumino 2 cucchiaini | Cumin 2 teaspoons
Semi di coriandolo in polvere 1 cucchiaino | Coriander seed powder 1 teaspoon

Preparazione

Per preparare il pollo al curry iniziate a preparare la marinatura: sistemate le spezie in un tegame e tostatele a fuoco basso per pochissimi minuti; poi trasferitele in una ciotola capiente.Aggiungete un pizzico di pepe e il sale, quindi unite lo yogurt greco e mescolate il tutto fino ad ottenere una crema dal colore uniforme. A questo punto tagliate il petto di pollo a cubetti di circa 1,5 cm e sistematelo all’interno della marinatura. Mescolate il tutto, coprite con della pellicola trasparente per alimenti e lasciate marinare in frigorifero per un paio d’ore. Se preferite, potete far riposare il pollo anche solo 10-15 minuti. Però più lascerete marinare più gli aromi renderanno la carne speciale! Una volta che il pollo avrà marinato iniziate a preparare il riso di accompagnamento. Sciacquate accuratamente il riso, poi versatelo in un pentolino, unite la stecca di cannella, le bacche di cardamomo e l’anice stellato. Aggiungete il sale grosso e l’acqua. Coprite con un coperchio e fate arrivare a bollore, quindi abbassate la fiamma e lasciate cuocere per 8-10 minuti. Nel frattempo occupatevi della cottura del pollo al curry. Tagliate la cipolla a fettine molto sottili (o se preferite potrete tritarla finemente); grattugiate lo zenzero fresco e tagliate il peperoncino a pezzi, privandolo del picciolo ma mantenendo i semi. Versate l’olio in un tegame, schiacciatevi l’aglio e unite cipolla, zenzero e peperoncino. Lasciate soffriggere a fiamma moderata e unite il pollo, insieme a tutta la marinatura. Lasciate cuocere per 8-10 minuti e nel frattempo tritate finemente il coriandolo, che aggiungerete solo all’ultimo in padella, quando il pollo sarà praticamente cotto. A questo punto sia il pollo al curry che il riso basmati sono pronti. Non vi resta che servirli!

Preparation

To prepare the chicken curry start marinating: place the spices in a pan and toast them on low heat for a few minutes; then transfer them to a large bowl.
Add a pinch of pepper and salt, then add the Greek yoghurt and stir until you get a uniformly colored cream.
At this point cut the chicken breast into cubes of about 1.5 cm and place it inside the marinade. Mix everything together, cover with transparent food film and leave to marinate in the refrigerator for a couple of hours. If you prefer, you can let the chicken rest for as little as 10-15 minutes. But the more you let it marinate, the more flavorings will make the meat special!
Once the chicken has marinated, start preparing the accompanying rice. Rinse the rice thoroughly, then pour it into a saucepan, add the cinnamon stick, cardamom berries and star anise. Add the coarse salt and water. Cover with a lid and let it boil, then lower the heat and cook for 8-10 minutes. In the meantime, cook the chicken curry. Cut the onion into very thin slices (or if you prefer you can finely chop it); grate the fresh ginger and cut the chili pepper into pieces, removing the petiole but keeping the seeds. Pour the oil into a pan, mash the garlic and add onion, ginger and chili pepper. Leave to fry over moderate heat and add the chicken, along with all the marinade.
Leave to cook for 8-10 minutes and in the meantime finely chop the coriander, which you will only add to the last one in the pan, when the chicken is practically cooked.
At this point both the chicken curry and the basmati rice are ready. All you have to do is serve them!
